Vegetable salad with feta

Vegetable salad with feta

I have made a very good habit for some time, that of eating salad in all forms and in all varieties. I really like the diversity of combinations and tastes, the dressing rooms can also be countless combinations of sauces and flavors and the caloric intake remains small.

My strategy is to always have salad available in various forms, some ready washed and packaged in various combinations, indispensable arugula and sorrel and lots of green vegetables.

  • We need for this salad:
  • a piece of cucumber,
  • a few radishes,
  • a sprig of green onion,
  • one tomato,
  • half a capsicum,
  • a handful of macris,
  • feta cheese,
  • dried herbs for salads
  • dressing I made a sauce from a tablespoon of light yogurt,
  • a little mustard and a drizzle of olive oil and dried herbs for salads (you can optionally add garlic if you want).

Servings: 1

Preparation time: less than 15 minutes

RECIPE PREPARATION Vegetable salad with feta:

Today I propose a salad of vegetables with feta, I put 30 grams of feta and I thought it was enough you can put more if you want.

As a dressing I made a sauce from a tablespoon of light yogurt, a little mustard and a drizzle of olive oil and dried herbs for salads (you can optionally add garlic if you want). I cut the vegetables and placed them in layers in a larger bowl, at the end I added a tablespoon of grated carrot (I really like it, you can give it up if you don't like it).

Pour the dressing at the end and mix carefully with a spatula. Garnish at the end with cubes of feta and dried herbs for salads. It is an excellent, aromatic and super light dinner.

What olive oil do we use for a salad like in Greece?

I used kalamata olives, natural and without seeds. I prefer them in Greek salad because they are not artificially colored and because they also taste very good. It is very important to use an extra virgin olive oil, of very good quality. Cold pressed olive oil is extremely healthy and beneficial to health, and we Romanians do not use it enough. It is best to use it raw, not thermally prepared to enjoy all its properties. Greek olive oil is very good. Just be careful not to be acidic because it is very bitter. I prefer one with 0.2 or 0.3 acidity.

Instead of lemon you can also use vinegar, but look for the most natural one. It can be red or white wine or apple wine, which I usually use. Of course you can customize your Greek salad as you wish. You can add or omit whatever ingredients you don't like. However, I would not give up olives, cheese and olive oil. You can instead give up lettuce which is not present in all variants. I sincerely hope that you also try my version of Greek salad and eat as many salads as possible. salad tabbouleh.

Chickpea salad with feta

Feta cheese, salty, creamy, goes very well with this Mediterranean salad with tomatoes, olives and chickpeas. It is known that the Romans attributed aphrodisiac qualities to chickpeas (see also other benefits of chickpeas). In addition, chickpeas are rich in fiber, folic acid, vitamin E, iron and manganese.

Number of servings: 4

Ingredient:

2 hearts of lettuce
4 well-ripened tomatoes, cut into slices
1 green bell pepper, cut into cubes
1 small red onion, cut into cubes
1 small cucumber, cut into cubes
1 can of boiled chickpeas (400 grams)
60 grams of pitted black olives
150 grams of feta cheese, cut into cubes

1 ½ tablespoon of lemon juice
1 teaspoon mustard
3 tablespoons olive oil
3 tablespoons chopped green parsley

Method of preparation:

In a bowl, mix the lemon juice and mustard, then emulsify with the oil. Add the parsley and pepper to taste (do not add salt, because the fetus is already salty).
Mix the vegetables in a salad bowl, along with the chickpeas, add the feta and the sauce.
Serve with warm bread.

  • 70-80 g raw spinach (baby spinach)
  • 100 g tuna (in oil or own juice)
  • 50 g of feta
  • salt
  • 2 tablespoons extra virgin olive oil
  • juice from half a lemon
