We put 1 l of water to boil and when it boils we put the semolina in the rain for a spoon, stirring constantly so as not to make lumps, and let it boil for a few minutes until it thickens, then we put it aside and leave it to cool.
When the semolina is cold, we start preparing the salad.
Put the caviar in a bowl and start mixing them at minimum speed with a drizzle of oil, then gradually add a tablespoon of semolina, a little cold mineral water and mayonnaise-like oil until the semolina is finished.
At the end we put the lemon juice and chopped onion as small as possible.
Mix and put in bowls, where we want and garnish with olives.
